Feeling ready for Spring then why not try these Homemade Chelsea buns?


1/2 tsp of yeast

225g (8oz) strong white bread flour

1 tsp sugar

25g (1oz) butter

1 tbsp milk powder

1/2 tsp salt

1 egg

110ml water

Additional ingredients required:

15g (1/2 oz) butter

100g (4oz) mixed dried fruit

50g (2oz) soft brown sugar

pinch mixed spice


Knead the dough (link below of a video of how to make it) lightly and roll out to an oblong 26cm x 20cm (10 x 8) Mix together the mixed dried fruit, soft brown sugar and a pinch of mixed spice. Brush the dough with melted butter and spread the fruit mixture on top. Roll up from the long edge and cut into 8 slices. Arrange in a greased 23cm ( 9″) sandwich tin and allow to prove until well risen. Bake at 220 degrees/Gas mark 7 for 15 minutes until golden brown. Allow to cool, drizzle with glace icing.
